Taking into account the time it takes to grow a sturgeon before spawning, the costs of its extraction are quite high, which indicates the value of “black gold.” The weight of the fish and, accordingly, the quantity of the obtained product depends on the growing conditions. The amount of sturgeon caviar can be found only after fishing and special manipulations. Sometimes, this indicator can exceed the above and reach 18-25% of the total weight.

Thus, it continues to produce high-quality caviar in the right quantity.
